A tangy and intensely flavoured ingredient commonly used in Middle Eastern and North African cuisines. Made by pickling lemons in salt and their own juices, which transforms their flavour and texture. Preserving lemons is a traditional method that allows the fruit to be used long after the growing season. A safflower and cumin salt-brine, infused with delicate spices. During the preserving process, the lemons lose their sharpness, but their citrus-flavour is intensified.
